Learn and understand pastry recipes
My name is Raphaël. I am a French pastry chef with more than 20 years of professional experience in France, New York and Norway.
What I enjoy most is teaching, which is why I created Pastry Models.
In my classes, I teach how to make pastries, but also why they work, why they fail, and how to correct them.
My classes are designed for home bakers who want to:
master techniques instead of memorising recipes
recognise when something is going wrong
fix mistakes instead of starting over
I believe pastry does not need to be perfect to be good.
It needs to be understood.
During my classes, you will learn clear reference points, practical observations and simple rules that allow you to reproduce results at home with the confidence of a professional chef.
Classes can be private or in small groups, for individuals, couples or special occasions.
